Here’s something you’d find out about me as soon as we sit down for a meal together: I have celiac disease and I’m lactose intolerant. Double YAY. I know that I am a hassle to feed at get-togethers, so I always offer to bring my own food. Luckily President’s Choice has made it so much easier for me, as well as my family and friends, thanks to their gluten-free and lactose-free ranges, so that entertaining is simple and #CompromiseFree.

Today I’ve partnered up with President’s Choice to share three #CompromiseFree dishes that are perfect for entertaining, regardless of dietary restrictions because these are gluten-free, lactose-free, and they are actually vegetarian as well!
I love to start off every meal with a salad, and this Crunchy Apple Beet Slaw (click here for the full recipe) is so good I packed the leftovers as my lunch and ate it 4 days in a row. Bonus? Those crunchy ingredients stay fresh all week, so if you are entertaining, it’s easy to make this salad in advance and just store the dressing separately. I often find potlucks happen right after work, so being able to make this salad the night before is super convenient.
This Crunchy Apple Beet Slaw starts with a base featuring the new PC Beet Slaw–I love this stuff, it’s like all those fancy salad you can buy in a bag but so much more affordable and you can add your own toppings. The suggested toppings including Granny Smith apples and sliced almonds.
I swapped out the cherries for raisins, since that was more easily available to me, and skipped the raw onion (which I don’t like) and pumpkin seeds, since I couldn’t find gluten-free ones, but they would definitely be a delicious addition! I mixed everything together and added the dressing, which was simple and super tasty (red wine vinegar, oil, garlic, sugar, salt and pepper). Honestly, this salad was so delicious and I will definitely be making it again and continuing to add more toppings!
Since we started the meal with something super healthy, I went for a “main course” that consisted of my boyfriend’s favourite meal, Nachos! We usually just add cheese to our nachos, so these Loaded Lactose-Free Nachos (you can find the full recipe here) were a real treat. This dish would be perfect for a movie-night with friends, and the best part is you don’t have to worry about lactose or gluten sensitives. I used the PC Kettle Style Blue Corn chips–which are thin and crispy and honestly so good. Then I topped it with green pepper, diced tomato, and our favourite, the PC Pickled, Sliced Jalapeno Peppers. These peppers were a huge kit and will definitely become a regular repurchase now. They aren’t insanely spicy but add a great kick to the nachos.
I grated up the PC Lactose-Free Marble Cheddar Chese, which tastes exactly the same as the regular marble, but without an upset tummy if you’re lactose-intolerant, and put everything in the oven. Afterwards, we dipped the nachos in in the PC Extra Chunky Medium Salsa (I love chunky salsas) and the PC Lactose-Free Sour Cream. I don’t know what it is about this sour cream, but honestly, it tastes better than regular sour cream. Seriously. I don’t care if you are lactose-free or not, you need to try it.
You can’t entertain without a dessert, and while I often go for chocolate–and seriously need to try the Caramel Milk Chocolate Mousse with Gluten-Free Pretzel “Pearls” recipe in the near future–this evening I had a bunch of spotty bananas and the Banana Walnut Bread (check out the full recipe here) sounded perfect. The PC Gluten-Free All-Purpose Flour Blend is a super convenient replacement for regular flour, so you can continue to make all your same baked goods in a GF-friendly way.
I did a little step-by-step tutorial of how I made the Banana Walnut Bread above, just ignore the Baking Powder in my ingredients photo, it was not necessary!
The final Banana Walnut Bread was not only #CompromiseFree, it was absolutely delicious. I haven’t added walnuts to my banana loaves in the past but that will definitely be repeated in the future, and this was so good we ate it with breakfast for the rest of the week. My boyfriend is always willing to tell me when a gluten-free alternative should remain an alternative, and he loved this. If you’re hosting overnight guests, this would be a perfect dish to serve in the morning that’s easy to make and prepare in advance.
